Chicken Soup
Bulgarian Recipe – Chicken SoupChicken Soup - is traditional bulgarian soup of chicken meat.
This Bulgarian recipe - Chicken Soup is intended to serve four persons
Ingredients for preparing a Chicken Soup:
· 1/2 kg chicken meat
· 1 carrot grated
· 1 stock celery finely chopped
· 1 onion finely chopped
· 1/2 cup rice
· 2 egg yolk
· juice from 1 lemon
Chicken Soup Cooking Directions:
Place chicken meat in a saucepan covered with salted water (about 2 litres) bring to boil then simmer slowly till cooked about 1 hour. Remove the chicken, and set aside. Sieve the stock and allow stock to cool overnight.
Remove the fat from the top. Bring stock to boil, add vegetables, rice and reduce to menium heat till cooked (20 minutes). Allow to cool. Then whisk 2 egg yolks slowly adding the lemon juice. Slowly add some of the Chicken Soup to this whisking at all times. Gradually return this mixture to the main Chicken Soup.
Serve Chicken Soup with crunchy bread or fried bread and cold beer.
