Kapama - is a traditional Christmas meal in Bulgaria.

This Bulgarian recipe - Kapama is intended to serve six persons

Ingredients for preparing a Kapama:

. 1 chicken
. 1 cup onions - minced
. 1 Tbs Garlic - minced
. 1 cup grated white cheese
. salt
. pepper
. 1/4 teaspoon Ground cinnamon
. 6 Tbs butter
. 2 cups crushed tomatoes
. 1 can tomato paste
. 1 teaspoon Sugar
. 1 cup Water
. 3 Sticks cinnamon
. 1 Bay leaf


Kapama Cooking Directions:

Sprinkle the chicken with salt and pepper. Then add cinnamon, melt 1/3 of butter and cook the chicken until it gets golden. In a bowl mix tomatoes, tomato paste, sugar, and water and pour the mixture over the chicken. Add cinnamon and bay leaf. In a separate frying pan, melt 1/3 of butter, onions,and garlic until the onions are wilted. Add the mixture to the chicken. Boil, cover, and simmer until the chicken is tender, 50 -60 minutes. Drain and empty into serving dish..

Serve Kapama with red wine.
